Classic Chocolate Chip Banana Bread
Adapted from Biscuits, Breads, and Cookies
This is one of my favorite recipes, and the one that I’ve probably been using longest. The chocolate chips are optional, but once baked into the bread, they stay very moist. I was once asked during an interview (for school!) whether I put chocolate chips in my banana bread. The response to my affirmative answer: “Oh you Americans—always putting chocolate in everything.”
Makes about: 1 large loaf (12+ servings)
Prep time: 15 minutes
Bake time: 60-90 minutes
1 cup sugar
½ cup oil
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla
1 tsp cinnamon
½ tsp salt
1 cup chocolate chips
1. Preheat oven to 350F.
2. Mash bananas. (I like using my hands for this, but feel free to use a fork or potato masher.)
3. Mix in sugar, oil, eggs, and vanilla.
4. Stir in flour, baking powder, baking soda, salt, and cinnamon.
5. Mix in chocolate chips.
6. Bake 60-90 minutes until a knife in the center comes out completely clean.
