Double Chocolate Buttermilk Cookies

These crispy chocolate cookies with chocolate chips are an excellent way to use up extra buttermilk and are also egg-free.

Makes about: 50 cookies
Prep time: 10 minutes
Bake time: 10-12 minutes/batch

½ cup unsalted butter
2 cups sugar
1 tsp vanilla extract
2/3 cup buttermilk
2 cups flour
½ tsp baking soda
½ tsp salt
¾ cup cocoa powder
2 cups chocolate chips

Special equipment

1. Preheat oven to 350F.
2. Cream together butter and sugar.
3. Add in vanilla.
4. Stir in buttermilk.
5. Mix in flour, baking soda, salt, and cocoa powder and stir until combined.
6. Stir in chocolate chips.
7. Spoon by teaspoon or tablespoon-fuls onto a parchment lined baking sheet. Leave space between cookies because they spread.
8. Bake 10-12 minutes. Let cool before moving.
