These decadent lime treats are really similar to the last post, Lime Squares. The difference is that there is far less filling in this case. I omitted the zest, but mainly because I’m too lazy to zest the limes.
Makes about: One 9×13 pan (24 cookies)
Prep time: 15 minutes
Bake time: 10 minutes
2 ¼ cups graham cracker crumbs
2/3 cup sugar
10 tbsp butter, melted (1 stick + 2tbsp)
1 ½ tsp lime zest (optional)
2/3 cup lime juice
3 egg yolks
1 can (14 oz) sweetened condensed milk
One 9×13 pan
1. Preheat oven to 350F.
2. Make crust: Mix butter, sugar, and graham cracker crumbs together. Press into 9×13 pan. Bake 10 minutes.
3. Make filling: whisk together condensed milk, lime juice, and lime zest until combined.
4. Bake 10 minutes until filling is set. (The knife won’t come out cleanly. If you bake it for longer, as I did, nothing bad will happen, but the filling won’t look as smooth and pretty.)
