Smitten Kitchen’s Carrot Cake

This makes a light and fluffy carrot cake. I don’t like frosting very much, so I didn’t include it here, but you can visit the original website for the recipe. It’s very easy to make, although the only time-consuming part is grating carrots (which always takes forever!).

Makes about: One 9×13 pan
Prep time: 20 minutes
Bake time: 30-40 minutes

2 cups all purpose flour
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
½ tsp nutmeg
1 tsp ginger
2 cup sugar
1 ¼ cup oil
4 eggs
3 cups grated carrots
1 cup walnuts (optional)
½ cup raisins (optional)

9×13 baking pan

1. Preheat oven to 350F.
2. Mix together oil, eggs, and sugar.
3. Mix in baking powder, baking soda, cinnamon, nutmeg, and ginger.
4. Mix in flour.
5. Stir in carrots.
6. Add in walnuts and raisins if desired.
7. Pour into parchment lined pan.
8. Bake 30-40 minutes until a knife (or toothpick) in the center comes out clean.
