Makes about: one 9×13 tray (half of original recipe)
Prep time: 15 minutes
Bake time: 45 minutes.

These bar cookies were very sweet and full of familiar flavors (peanut butter and jelly!). They were crunchy on top, with sugar soft inner filling.

1 stick butter
¾ cup sugar
½ tsp vanilla
1 egg
1 cup peanut butter
1 ½ cup flour
½ tsp baking powder
¼ tsp salt
¾ cup jam (I used 18oz jar—25 tbsp jar)
1/3 cup peanuts, optional

1. Preheat oven to 350F. Prepare 9×13’’ baking pan with parchment paper or greased foril.
2. Cream butter, peanut butter, and sugar together.
3. Mix in vanilla extract and egg.
4. Beat in flour, baking powder, salt.
5. Spread 2/3 of dough into prepared pan.
6. Spread jam over the cookie dough.
7. Sprinkle remaining 1/3 of dough over jam.
8. Bake 45 minutes or until top is golden brown.

Whew! The name is a mouthful…and a list of nearly everything in the cookie. These cookies are crispy on the outside and slightly moist on the inside. There’s a nice crunch to them from the oats and from the crunch peanut butter. While delicious, they aren’t really as healthy as they might seem (butter! sugar!) Also, it’s important to use dark brown sugar to get the nice golden tint, since most cookies with less eggs/fat don’t brown as well.

1 ¼ cup whole wheat flour
¼ tsp salt
½ tsp baking powder
½ tsp soda
1 tsp vanilla extract
1 cup rolled oats
½ tsp cinnamon
1 cup dark brown sugar
½ cup butter, room temp
1/3 cup greek yogurt
½ cup peanut butter (I used crunchy)
1 egg
1 cup chocolate chips

1. Preheat oven to 375F.
2. Beat together butter, peanut butter and egg.
3. Add sugar.
4. Add salt, baking powder, baking soda, vanilla extract, cinnamon.
5. Add in oats.
6. Add in flour.
7. Add in chocolate chips.
8. Scoop by tablespoons onto prepared pan (they don’t spread that much, FYI).
9. Bake 12 minutes. Enjoy!

Peanut Butter Cookies from Joy of Cooking

1 ½ cup flour
½ tsp baking soda
⅓ cup butter (5 ⅓ tbsp)
½ cup granulated sugar
½ cup brown sugar
1 egg
1 cup peanut butter
½ tsp vanilla

1. Preheat oven to 350F. Prepare baking pan.
2. Cream together butter, granulated sugar, and brown sugar.
3. Beat in egg.
4. Mix in peanut butter and vanilla.
5. Mix in flour and baking soda.
6. Scoop onto prepared pan. Cookies don’t spread much.
7. Bake for about 12-14 minutes. If desired, flatten cookies halfway through baking.

Peanut Mini-Blossom Cookies

Instead of having a chocolate kiss pressed into the center, these cookies have a large chocolate chip pressed into the center (hence, mini-blossoms). The combination of peanut butter and chocolate is quite delicious ☺ Of course, you can feel free to follow the original recipe, which uses regular-sized kisses.

Makes about: 60 tiny cookies
Prep time: 15 minutes
Bake time: 8-10 minutes

½ cup unsalted butter
¾ cups peanut butter
1/3 cup brown sugar
1/3 cup white sugar
1 egg
1 tsp vanilla
2 tbsp milk
1 ½ cups all purpose flour
1 tsp baking soda
¼ tsp salt
1/3 cup sugar (for coating—optional)
48 unwrapped chocolate kisses (I used 60 chocolate chips)

Special equipment
Baking pans

1. Preheat oven to 350F. Prepare baking pans by lining with parchment paper or by greasing.
2. Cream together butter and peanut butter until smooth.
3. Add in brown sugar, sugar, and egg. Blend until smooth.
4. Stir in vanilla and milk and mix until well combined.
5. Add in flour, baking soda, and salt. Mix until fully combined.
6. Using your hands, form the dough into small balls. Roll in sugar if desired, and place on baking pans.
7. If using semi-sweet chocolate chips, you can press the chocolate chips into the center of the cookies before baking. If you are using the chocolate kisses, you should first bake the cookies, then press in the chocolate kisses. This is so that the chocolate will not blister or melt while in the oven.
8. Bake for 8-10 minutes, or until cookies are lightly browned. If using chocolate kisses, gently press the chocolate into the soft cookie.

These chewy and wholesome brownies are packed with delicious peanut butter and Nutella flavor. I wish I could tell you that they are actually healthy…and I wish I could also tell you that I’m not procrastinating.

Makes about: one 9×13 pan, or 24 bars
Prep time: 10 minutes
Bake time: 30-40 minutes

¾ cup peanut butter
¾ cup Nutella
1 ½ cup brown sugar
3 eggs
3 ¾ cup oats
1 ½ tsp baking soda

Special equipment
9×13 pan, lined with parchment

1. Preheat oven to 350F.
2. Mix together peanut butter and Nutella until well blended.
3. Stir in brown sugar.
4. Beat in eggs until well combined.
5. Stir in baking soda and oats.
6. Scrape batter into prepared parchment-lined pan.
7. Bake for about 30-40 minutes, or until a knife inserted in the center comes out clean.
8. Let cool before cutting.

1 cup (2 sticks) unsalted butter, softened
1 ¾ cups sugar
1 cup peanut butter
3 large eggs
2 tsp vanilla
2 cups all-purpose flour
1 ½ cups semisweet chocolate chips
½ tsp salt

9×13 pan lined with parchment paper

1. Preheat oven to 350F.
2. Cream butter until smooth (using a fork, hand mixer, or your hands).
3. Stir in peanut butter. Mix until smooth.
4. Mix in sugar.
5. Beat in eggs.
6. Add vanilla.
7. Stir in flour and salt.
8. Mix in chocolate chips.
9. Scrape into prepared pan and make sure it’s evenly distributed.
10. Bake 40-45 minutes until golden brown.
