Nice brownies
These nice brownies are a bit minty with some white chocolate chips. There’s a bit of greasiness to them, unfortunately. I think I like the Grasshopper Brownies from Smitten Kitchen a bit better for mint brownies.

Makes about: 8×8 pan
Prep time: 15 minutes
Bake time: 35-40 minutes.

Ingredients
1 stick butter
2 oz unsweetened choc
4 oz semisweet chocolate
1 cup sugar
2 eggs
¾ tsp mint
½ cup flour
pinch salt
4 oz white choc chips

Directions
1. Preheat oven to 350F.
2. Melt together butter and chocolates.
3. Mix in sugar.
4. Mix in eggs
5. Mix in mint, flour, and salt.
6. Mix in chocolate chips.
7. Pour into prepared pan, bake 35-40 minutes or until knife comes out clean.

Milk Chocolate Hazelnut Cookies from Flour

Crispy and delicious cookies. I like the pairing of milk chocolate and the hazelnut—reminds me of nutella ☺ These cookies do brown and spread. Nice crispy cookie with contrasting bits inside. Also I neglected to grind half the hazelnuts, and ended up just adding all of them in (and also forgot to chop them). They still turned out fine with whole hazelnuts. Also I made half of the original recipe.

Makes about: 27 cookies, tablespoons
Prep time: 15 minutes
Bake time: 15 mins/batch

Ingredients

6.5 tbsp butter
1/3 cup granulated sugar
1/3 cup brown sugar
1 egg
¼ tsp vanilla
¾ cup blanched toasted whole hazelnuts (I used roasted hazelnuts that still had skins)
¾ cup flour
½ tsp baking soda
3/8 tsp salt
6 oz milk chocolate

Special equipment
Something to grind the hazelnuts

Directions
1. Preheat oven to 350F.
2. Cream together butter and sugars till fluffy.
3. Add egg and vanilla.
4. Grind half the hazelnuts and chop the other half. Add in to egg mixture. Alternately, if you skip this step, the cookies will still be fine.
5. Blend in flour, baking soda, and salt.
6. Mix in milk chocolate.
7. Let dough rest for a few hours (or, you can bake right away).
8. Bake 15-20 minutes, or until cookies are golden brown.

Neely’s Lime Bars

These are very sweet bars. I omitted the zest because I was too lazy to zest the limes. You’ll get more lime flavor if you put in the zest, but it was still good without it. There’s a very high crust to filling ratio, which I didn’t like as much.

Makes about: one 9×13 pan
Prep time: 15 minutes
Bake time: 25 minutes (crust) +25-30 minutes (filling)

Ingredients
Crust:
1 cup butter
½ cup confectioner’s sugar
2 cups flour
pinch of salt

Filling:
4 eggs
2 cups sugar
6 tbsp flour
¼ cup+ 2 tbsp lime juice
2 tsp lime zest

Directions
1. Preheat oven to 350F.
2. Cream together butter, confectioner’s sugar.
3. Mix in flour, salt. Should be sandy in texture.
4. Press into prepared pan.
5. Bake 20-25 minutes or until slightly golden brown.
6. Mix together eggs, sugar, flour, lime juice, and zest until well blended.
7. Pour over prepared crust.
8. Bake until the filling sets (no longer jiggly), about 25-30 minutes.
9. Let cool completely before cutting (place in freezer or fridge to help that process along.

Jelly Tots

Makes about: 24 cookies
Prep time: 10 minutes
Bake time: 5 min+18 minutes

These delicious jam cookies are not too sweet. The cookie itself is buttery and slightly crispy, which makes a nice contrast to the sweet and sticky jam.

Ingredients
½ cup sugar
½ cup butter
1 tsp vanilla
2 eggs
2 ½ cups flour
2 tsp baking powder
½ tsp salt
Jam of choice (I used raspberry)
Sugar for rolling

Directions
1. Preheat oven to 375F. Prepare baking pan with parchment paper
2. Cream together butter and sugar
3. Mix in vanilla and eggs
4. Add in flour, baking powder, and salt.
5. Form dough into 1’’ balls.
6. Roll cookies in sugar (I skipped this step.)
7. Place balls on baking sheet and bake 5 minutes.
8. Remove balls from oven and use your finger (or the end of a utensil) to poke dents in the tops of the balls.
9. Scoop jam into the dents just created.
10. Return cookies to oven and bake another 8 minutes.
11. Enjoy!

Peanut Butter Oatmeal Chocolate Chip Cookies with Greek Yogurt

Whew! The name is a mouthful…and a list of nearly everything in the cookie. These cookies are crispy on the outside and slightly moist on the inside. There’s a nice crunch to them from the oats and from the crunch peanut butter. While delicious, they aren’t really as healthy as they might seem (butter! sugar!) Also, it’s important to use dark brown sugar to get the nice golden tint, since most cookies with less eggs/fat don’t brown as well.

Ingredients
1 ¼ cup whole wheat flour
¼ tsp salt
½ tsp baking powder
½ tsp soda
1 tsp vanilla extract
1 cup rolled oats
½ tsp cinnamon
1 cup dark brown sugar
½ cup butter, room temp
1/3 cup greek yogurt
½ cup peanut butter (I used crunchy)
1 egg
1 cup chocolate chips

Directions
1. Preheat oven to 375F.
2. Beat together butter, peanut butter and egg.
3. Add sugar.
4. Add salt, baking powder, baking soda, vanilla extract, cinnamon.
5. Add in oats.
6. Add in flour.
7. Add in chocolate chips.
8. Scoop by tablespoons onto prepared pan (they don’t spread that much, FYI).
9. Bake 12 minutes. Enjoy!

⅓ cup butter (5 ⅓ tbsp)
½ cup granulated sugar
½ cup brown sugar
1 egg
1 cup peanut butter
½ tsp vanilla

Directions
1. Preheat oven to 350F. Prepare baking pan.
2. Cream together butter, granulated sugar, and brown sugar.
3. Beat in egg.
4. Mix in peanut butter and vanilla.
5. Mix in flour and baking soda.
6. Scoop onto prepared pan. Cookies don’t spread much.
7. Bake for about 12-14 minutes. If desired, flatten cookies halfway through baking.

3. Mix in eggs and vanilla.
4. Mix in flour, baking soda,baking powder, and salt.
5. Mix in oats.
6. Mix in chocolate chips and walnuts.
7. Scoop onto prepared pan. Cookies don’t spread much.
8. Bake 10-12 minutes or until cookies are golden brown. (If you want flat cookies, feel free to squish them with a spoon halfway through baking).

These chocolate chip cookies are similar to Mark Bittman’s, except that there’s lots more vanilla and slightly more sugar. I think I like the addition of more vanilla.

½ cup brown sugar
1 egg
1 cup + 2 tbsp flour
½ tsp baking soda
¼ tsp salt
1½ tsp vanilla
1 cup chocolate chips
¾ cup walnuts, chopped

Directions
1. Preheat oven to 375F. Prepare baking pan.
2. Cream together butter, granulated sugar, and brown sugar.
3. Mix in egg.
4. Mix in flour, baking soda, salt, and vanilla.
5. Mix in chocolate chips
6. Scoop onto prepared pan. Cookies spread quite a bit, so leave some space.
7. Bake 8-12 minutes or until cookies are golden brown.

These cookies are fairly pale, and I didn’t quite understand why I needed to add milk at all. Anyways, they turned out to slightly more cake/scone-like than crispy-cookie like and very very pale looking. Not sure I’d use this recipe again.
